Turkey a la King

Great way to use up leftover turkey from Thanksgiving. Can also be made with roasted chicken leftovers. Best when served over biscuits or toast.


Ingredients

  • 3 cups cooked chopped turkey (or chicken)
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • pinch ground pepper
  • dash nutmeg
  • pinch poultry seasoning
  • 1 small bay leaf
  • 3 cups milk
  • 1/4 cup mayonnaise
  • 4 tablespoons heavy whipping cream
  • paprika and/or seasoning salt to taste (optional)

Instructions

  1. In large saucepan melt butter and add salt, pepper, nutmeg, poultry seasoning, and bay leaf.
     
  2. Add flour to form a rue.
     
  3. Slowly wisk in milk.
     
  4. Stir continuiously until mixture thickens. (about 10 minutes)
     
  5. Add cream and mayonnaise. Taste test and adjust seasonings as needed.
     
  6. Add turkey (or chicken). Continue to heat and stir until warmed through.
     
  7. Serve over biscuits or toast.
