Sofrito (A cooking base)

This is a base that's used to spice most Puerto Rican dishes. Use it for cooking rices, beans, meats, and everything in between. Every 'Rican has their own version, with their own balance of vegetables. You can adjust it to taste. Some like more red peppers, some more green, some more garlic. Experiment with different mixtures to see what works best for you.

WARNING: Find a cheap blender that you'll use JUST for this, as anything else you make in this blender will forever be scented with sofrito.


Ingredients

  • 1 red pepper
     
  • 1 green pepper
     
  • 1 large tomato (or 2 small)
     
  • 1 small yellow onion
     
  • ½ bunch cilantro
     
  • 8-10 cloves of garlic, peeled

Instructions

  1. Cup up peppers and remove seeds and stem.
     
  2. Cup up tomato and onion. Large pieces are fine.
     
  3. Add garlic and tomatos to the blender first, and blend well. Then add peppers and onions, stopping occasionally to stir and press down. Blend until mostly smooth, with small chunks.
     
  4. Pour into mason jars, leaving about ¾" space at the top of the jar. Freeze jars and defrost a jar when needed. Lasts a couple months defrosted.
