Sausage & Tortellini Soup

Creamy sausage and tortellini soup recipe that's been adjusted so a) it's not super spicy, and b) I don't die (I'm allergic to spinach, which seems to be in every flippin' Italian recipe). Hearty and tasty!


Ingredients

  • 1 lb Italian sausage
  • ½ small yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2-4 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 5 cups chicken broth
  • 14 oz refrigerated cheese tortellini
  • 1 tsp kosher sea salt
  • 2 cups heavy whipping cream

Instructions

  1. In a large stockpot set over medium-high, cook the sausage until browned. Add in carrots, onions and garlic, sauteing for 5 min or until vegetables are soft and fragrant. Make sure to stir to prevent burning.
     
  2. Whisk in the flour and cook for 1 minute. Gradually add in the chicken broth, whisk to combine. Continue cooking until the mixture reaches a simmer, then reduce heat to medium-low and simmer for 6 min.
     
  3. Add tortellini, salt, and heavy cream. Simmer for 5-10 miin.
     
  4. Serve immediately with freshly grated parmesan or some fresh baked bread.
