Ropa Vieja
Combine all ingredients into a glass bowl and mix.
Pour in beef broth, tomato sauce, and paste.
Sear steak on each side for 3-4 minutes in pan.
Add steak and pour in ingredients, and flip steak every hour.

Cooking Time: 4-6h

Servings: 8-12

A delicious meal that's much easier than it looks. Serve with white rice, black beans, and fried plantains.


Ingredients

  • 4-6 minced cloves of garlic
  • 1 can (6 oz) tomato paste
  • 1 can (8 oz) tomato sauce
  • 1 tsp ground cumin
  • 1 tsp chopped fresh cilantro
  • 1 tbsp olive oil
  • 1 small sliced onion
  • 1 green or red bell pepper, seeded and sliced into strips
  • 1 cup beef broth
  • 1 tbsp white vinegar
  • 2 lbs flank steak (can substitue with skirt steak, if needed)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Brown the flank stead on each side, about 4 minutes per side.
     
  2. In large bowl, combine all remaining ingredients, mixing thoroughly.
     
  3. Line slow cooker with cooking bag for easier clean-up.
     
  4. Transfer steak to a slow cooker. Make sure to pour in any steak juice from the pan. Pour in mixed ingredients and make sure to beef is coated well.
     
  5. Cover and cook on high for 4-5h, or on low up to 10h. Once every hour, flip the steak to ensure it is submerged in the juices.
     
  6. When ready, shread the steak, stir thoroughly, and serve.
