Feed an army - or a few really hungry people - with this meal. A fun meal to make with the kids, as it's very hands-on. This meal also feezes very well. Cut into 2" x 2" x 4" slices and double-wrap with plastic wrap to place in the freezer. Defrost on the counter and then reheat in oven at 350° or in the microwave.


Ingredients

  • 1 16oz box Lasagna noodles
  • 2 lb ground beef (90% lean or better)
  • 2 14oz jars spaghetti sauce (we prefer Prego Traditional)
  • 1 16oz container ricotta cheese
  • 2 lb (32 oz) mozarella cheese (grated)
  • Salt
  • Vegetable Oil
  • Garlic Salt
  • Seasoning Salt
  • Ground Black Pepper

Instructions

  1. Season ground beef with galic salt, seasoning salt, and ground black pepper to taste. Brown the ground beef in a pan on medium heat. Once beef is cooked, pour in 1½ jars of the spaghetti sauce. Allow to simmer, then remove from heat and set aside.
     
  2. Boil lasagna noodles in large pot (add salt for flavor and a little vegetable oil to the water to prevent sticking). We prefer to slightly undercook the noodles so that as they absorb the spaghetti sauce and fats from the cheeses as they cook in the oven, they don't become too soft. When noodles are cooked, strain them in a large strainer. Add cold water to the pot you just used, and pour the noodles back into that pot.
     
  3. Pre-heat oven to 375°.
     
  4. In a 3 qt Pyrex (or other glass) baking dish, spread a little of the remaining spaghetti sauce from the jar to coat the bottom of the baking dish. This prevents the noodles from burning. Lay four strips of noodles onto the bottom, slightly overlapping the edges.
     
  5. Next, ladel meat sauce from the pan onto the noodles, spreading to cover the entire layer.
     
  6. Scoop tablespoons of the ricottta cheese on top of the meat sauce layer, spreading the cheese thin (we usually take if off the sppon and do this by hand).
     
  7. Cover entire layer with grated mozarella cheese.
     
  8. Add your next layer of noodles, and repeat steps 5-7.
     
  9. Add your top layer of noodles, and then cover evenly with more mozarella cheese. Cover with aluminum foil and place in the over for 45 min. You should see the sauce boil through the side of the dish, and the cheese on top (when you lift the foil) should be completely melted.

NOTE: You will end up with some leftover ingredients (noodles, meat sauce, and cheeses). Usually we will save these and allow our kids to mix up their own meals with them.
