Crispy Tofu

Tofu is very plain, but also very versatile. If you want to crisp it up and mix it with some sauces, this process has worked quite well.


Ingredients

  • 1 lb firm or extra-firm tofu
     
  • 1 tsp oil (your choice of type)
     
  • Sprinkle of salt (to taste)

Instructions

  1. Take the block of tofu and drain the water.
     
  2. Place a tea towel paper towels above and below the tofu on a cutting board, and place a heavy pot or cast iron skilled on top for at least 5 min, to squeeze out the excess water.
     
  3. Pre-heat over to 325º F.
     
  4. Cut into 1/2" cubes (1-2" x 1/2" x 1/2" rectagles, if wanting larger pieces).
     
  5. Fry in a cast iron skillet (or normal frying pan) with the oil, for about 5 minutes, turning the tofu to brown all sides. Sprinkle salt onto the tofu.
     
  6. Place the cast iron skilled into the over. If you are using a normal frying pan, transfer the tofu to an oven-safe dish and place in the over.
     
  7. Cook for 15 min, to get a light crisp. If you want firmer sides, add 5 min increments until you get the desired texture. We found 15 min is pretty good.
     
  8. Remove from over.

Using a wok or pan, you can now fry to the tofu with your favorite sauces. We've done sweet and sour, teryaki, and orange sauces, but curry based sauces should work great.
