Chocolate Chip Banana Bread

A simple but effective banana bread loaf, with a lot of wiggle room for experimentation.


Ingredients

The Bread

  • 2 cups (454g) mashed banana
     
  • 1/2 cup (99g) vegetable oil
     
  • 1 cup (213g) light brown sugar or dark brown sugar, packed
     
  • 2 large eggs
     
  • 1 tsp vanilla extract
     
  • 1 cup (120g) all-purpose flour
     
  • 1 cup (113g) wheat flour (you can optionally use 2 cup of one type of flour)
     
  • 1 tsp baking soda
     
  • 1/2 tsp baking powder
     
  • 3/4 tsp salt
     
  • 1 tsp cinnamon
     
  • 1/2 cup (57g) semi-sweet chocolate chips
    • You can optionally replace this with 1/2 cup of chopped nuts, or up to 1 cup of dried fruit

Toppping (Optional)

  • 1 tbsp granulated sugar
     
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350° F (325° F for glass or stoneware pan).
     
  2. Lightly grease 9" x 5" loaf pan.
     
  3. In a bowl, mix together the banana, oil, sugar, eggs, and vanilla extract.
     
  4. In a separate large bowl, mix the flours, baking soda, baking pwder, salt, cinnamon, and nuts (or other mixins).
     
  5. Pour the wet ingredients into the dry, mixing thoroughly. Make sure to scrape the bottom and sides of the mix.
     
  6. In a small bowl, mix the granulated sugar and cinnamon for the topping.
     
  7. Pour mixture into prepared pan, then sprinkle the topping mixture over the batter.
     
  8. Bake 60-75m until the bread feels set on top, and a knife inserted to the center comes out clean or with just a few moist crumbs. Should temp at 205° F in the center. If it starts to brown too early, tent it with aluminum foil for the final 15-20m.
     
  9. Remove from the oven, and allow it to cool for 10-15m. Loosen the edges and turn out onto a rack to cool.

Will last several days at room temperature if tightly wrapped, and will freeze for a couple months.

Muffin Option: Will make approx. 15 standard-sized muffins. Bake at 350° F for 20-23m.
