Said to be good luck when eaten for New Years. This is not a recipe you measure, so much as feel.
Ingredients
Small bag of black eyes peas (1lb)
Smoked turkey (or other smoked meat)
Season salt (about 1 1/4 tsp x 2)
Ground black pepper (about 1/4 tsp x 2)
Garlic powder (about 1/2 tsp x 2)
Cayenne pepper (to taste, optional)
Onion powder (about 1/2 tsp x 2)
Bay leaf (x2)
Thyme (about 1/4 tsp x 2)
Instructions
Add season salt, pepper, garlic powder, cayenne (optional), onion powder, bay leaf, and a little thyme into a large bowl. Then add beans, and enough water to cover the beans. Let soak for a minimum of 2h (up to overnight).
Fill a saucepan with 6 cups water (for 1lb bag) and add the meat and a second round of seasonings. Simmer for 30 minutes.
Rinse and drain the beans and sort out any rocks/dirt.
Add the beans to the water and slow simmer 4h for a small bag (1lb) of beans, 6h for a large bag.
