Apple Cobbler

A tasty treat, especially fresh out of the oven and served with some ice cream. Easy made with peaches, as well.


Ingredients

  • 4 large Granny Smith apples
    • ~4 cups, cored and sliced
  • ~1-2 cups Apple juice (for soaking)
  • 1 tbsp lemon juice
  • ¾ cup granulated sugar
  • ¼ tsp salt

For the Batter:

  • 6 tbsp salted butter, diced
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup milk
  • Ground cinnamon

Instructions

  1. Peal, core and slice the apples. Place in a bowl and add lemon juice. Pour apple juice into bowl until apples are just covered. Let soak for 20 min.
     
  2. In a large bowl, thoroughly mix flour, ¾ cup granulated sugar, ¼ tsp salt, and baking powder. Set aside.
     
  3. Preheat oven to 350º F. Add butter to a 13 x 9" baking pan, and place in over to melt while oven is pre-heating.
     
  4. Drain most of the juice from the apples, leaving about a ½ cup left. Add apples, ¾ cup granulated sugar, and ¼ tsp salt to a large sauce pan on medium heat. Heat and mix until sugar is disolved, and set aside.
     
  5. Take the heated baking pan out of the oven. Add milk to dry ingredients and mix to a pancake-like consistency. Pour over the melted better evenly.
     
  6. Scoop apple slices and place evenly over the batter. Once al lthe apple slices are placed, pour remaining liquid over the entire thing.
     
  7. Sprinkle liberally with cinnamon all over the top, and bake for 38-40 min.
     

To make with peaches, omit the apple juice and lemon juice, and use approx. 5 peaches, pealed, cored, and sliced. Peaches have enough juice in them that you don't need to pre-soak. If you don't want to use fresh peaches, you can substitute canned peaches (approx. 1 quart), undrained.
