When we got married, my Titi Belen was visiting us form Puerto Rico, and all we asked for our wedding was the recipe to her famous flan.
Ingredients
1 cup Sugar
5 Eggs
1 can (14 oz) Sweetened Condensed Milk
1 can (8 oz) Evaporated Milk
1 tbsp vanilla extract
½ can water (from the condensed milk can)
Instructions
Heat the 1 cup of sugar on the stove until it makes a brown caramel. You must stir continulously to prevent it from burning or from being lumpy. Pour into a 9" airbake pan and let it cool.
Combine eggs, condensed milk, evaporated milk, vanilla, and water in a blender and blend thoroughly.
Pour blended ingredients into pan on top of cooled caramel.
Place pan into another water-filled pan. Water should just be touching the bottom of the baking pan.
Place carefully into oven and bake at 350° for approx. 50-60min.
Remove from oven and allow to cool. Place in fridge overnight to set properly.
Using a spoon, skim the browned layer lightly off the top of the flan. Loosen the edges of the flan from the pan with a butter knife. Then, quickly and carefully flip the flan over onto a plate, lifting the baking pan off the flan. Pour any remaining caramel from the pan onto the flan.
