Servings: 12 noodle cakes

A simple, kid-friendly, flexible recipe that can be made in a rush, and is easy for kids to make. Reheats very well. Usually served with mixed vegetables, garlic bread, and a side of alfredo sauce for dipping.


Ingredients

  • ½-box (8 oz) small shells (you can make this with spaghetti, but small shells are easier to mix)
  • ½ can Spam® diced into small cubes
    • Optionally you can use  6-8 oz (approx. ½) ham steak
  • ½ tsp garlic salt
  • 4 eggs, scrambled in large bowl
  • 12-count muffin trays
  • Grated Parmessan cheese
  • Vegetable oil
  • Salt
  • Cooking Spray

Instructions

  1. In large bowl, scrabmle the eggs, and set aside.
     
  2. Spray muffin tin with cooking spray, coating thoroughly to prevent sticking.
     
  3. Fill a large pot with water for the noodles. Pour in a little vegetable oil (about 1 tbsp) to prevent noodles from clumping, and add salt to taste.
     
  4. While noodles are cooking, dice Spam® or ham into small cubes, and brown cubes in a pan on medium heat (usually 4-6 minutes).
     
  5. Preheat oven to 350° F.
     
  6. Pour meat into a very large mixing bowl. Once noodles are cooked, drain them of water and pour noodels into mixing bowl with meat. Pour in scrambled eggs, and add garlic salt. Mix thoroughly.
     
  7. Using a cooking spoon, fill muffin tin spaces to the top with mixture. Depending on the amount of meat used, sometimes the spaces will be filled over the rim, other times you'll end up with 11 spaces filled instead of 12.
     
  8. Sprinkle grated parmessan cheese on top of each space, covering the mixture.
     
  9. Place in over and cook for 13 minutes, or until top noodles just start to brown.
     
  10. Remove from oven and let cool for 2 minutes.
     
  11. Using a butter knife, scrape around the edge of each cake to loosen it from the tin space, then pry the cake out onto a plate or cooling rack.
