Chicken Satay Skewers

Servings: 10-12 skewers


Ingredients

  • 1 tsp curry powder
     
  • 1½ tsp brown sugar
     
  • 1 clove garlic, minced
     
  • ½ cup coconut milk
     
  • ½ tsp salt
     
  • ½ tsp ground black pepper
     
  • ¾ lb skinless, boneless chicken breast halves, cut into 1-inch strips

Instructions

  1. Mix curry powder, brown sugar, garlic, coconut milk, salt and pepper.
     
  2. Add chicken and marinade to a plastic bag and toss to coat; allow to marinade for at least 2 hours.
     
  3. Grill marinated chicken on wooden skewers, about 5 minutes per side; let rest for 5 minutes, then serve with warmed peanut sauce.
